Each Spice packet is good for 1-pound of meat.

CHOOSE MILD OR SPICY.

Use this spice blend to Make delicious Linguica (also known as Portuguese Sausage) (mild version) or Chourico (spicy version) at home. So choose mild or spicy. Just add 1-pound of Ground pork and mix! Recommend using ground pork with 80% lean & 20% fat ratio. Note: This will make a “Fresh” sausage type. This is much easier to make and no Smoking is necessary. * I used Trader Joe’s All-Natural Ground Pork. The 80%/20% ratio is perfect and plus, no antiobiotics & no hormones were ever used in the meat.

You can also use Ground Chicken or Turkey, but make sure you bring up the Fat content or else your sausage may be too dry and crumbly. 

DIRECTIONS:
1) Combine well Pork (or your meat of choice) with Spice mix in bowl. 
(Optional): To add Green freshness : Chop 2-3 Stalks of Green onions and add to the mix.
2) Cover bowl with plastic wrap and refrigerate overnight to allow flavors to meld. (If you want to enjoy immediately, you can Skip this step & cook.) 
3) Shape & cook as desired. 

MAKE WONDERFUL DISHES:
• Make breakfast sausage patties! Serve with rice & egg, or make an egg muffin sandwich with cheese.
• Fry the (loose) sausage meat and then spread on for a pizza topping, tastes great!
• Or make patties for a “Linguica Burger”, top with Avocado
• Fry up loose sausage with ground beef to make great tacos or burritos
• Stuff into casing and cook as desired. (You can smoke your sausages, if you wish, but it is not necessary, as the spices already give its smoky flavor. But if you prefer to smoke it, due to the time it takes to smoke, we suggest getting several packets to make several pounds of sausages.)
